Four things we don't compromise on: charcoal, spice, fire, and time. Every protein is hand-marinated the morning it's served and fired over real lump charcoal — built to order, plate by plate.
No gas grills. No pre-cooked trays. No mystery meat. We trim the cuts, mix the marinades, and work the fire ourselves. It's slower. It's the only way it tastes the way it should.
CHARBQ is built around one belief — that real charcoal BBQ, the kind we grew up on, deserves a home here. So we built it: a kitchen where every protein is Zabiha-certified, the marinades are mixed by hand every morning, and the grill is open flame from the moment we open the doors until the last plate leaves the line.
